Zinc and vitamin E play a significant role in promoting immunity and radiant skin,” says Poornima. Other discarded seeds that are edible are jackfruit seeds and mango seeds that have plenty of nutrients benefi cial for overall health.
How to use: Add dried and roasted pumpkin seeds to soups, salads, candies, muffins or whip to make creamy butter, cookies or halwa. Use jackfruit seed to make curry, chutney or vada. Try mango seed curry or make dry mango seed powder to flavour dishes. (Make use of the kernel by opening the hard shell of the mango seed).
